Continuing our no-bake cookie recipe adventures, this week’s cookie was a chocolate, oatmeal, quinoa, coconut and peanut butter combo. The only thing that would have made this better was rice crisp cereal but I unfortunately didn’t have any on hand.
I had some unused cooked quinoa in the fridge that I didn’t have plans for until I found this recipe on Money Saving Mom’s website. I ended up probably doubling the amount of quinoa and oatmeal in this recipe, as I found them really gooey. Which I don’t mind, but didn’t want the quinoa to go to waste, so I threw it all in (probably about 1 cup by the time I was done adding it all). Since I added the extra ingredients, this made a TON of cookies, way more than the 15-18 as suggested in the original recipe.
- 1/2 cup honey
- 1/4 cup coconut oil
- 4 tablespoons cocoa powder
- 1/2 cup peanut butter
- 1 teaspoon vanilla
- 1/2 cup shredded coconut
- 1/2 cup cooked quinoa
- 1/2 cup oatmeal
- Bring honey, coconut oil, and cocoa to a boil. Turn down heat and summer for three minutes.
- Remove from heat and stir in peanut butter, vanilla, coconut, quinoa, and oatmeal. Dollop cookie-sized portions onto a cookie sheet that is covered with waxed paper.
- Refrigerate or freeze until set. Store in a ziptop bag or airtight container in the refrigerator or freezer.
